Fall Back Recipies

Do any of you have any recipes that you are constantly using? For me it's lasagna and for Amy it's tacos. I'm trying to add to my little recipe box so I would love to hear the one recipe you always tend to reach for. The reason I bring this up is because we're having a few friends over tomorrow night for dinner and to watch The L Word and I'm pulling out my old faithful lasagna recipe because it's fast, easy and above all VERY TASTY.

No Boil Lasagna (serves 8)
Ingredients:
1T vegetable oil
1 medium onion
1 clove minced garlic
1lb ground beef
2-14oz cans tomato sauce
1-10oz can sliced mushrooms
1/2c water
1t oregano
1c cottage cheese
1/3c grated Parmesan cheese
1 egg slightly beaten
2t vegetable oil
1t salt
1-6oz package sliced mozzarella cheese
15 pieces uncooked lasagna

Instructions: (Preheat oven 375F)
Cook garlic, onion and meat over medium heat until brown. Remove excess fat. Stir in tomato sauce, mushrooms with their liquid, water and oregano; bring to boil and remove from heat. Combine cottage cheese, Parmesan cheese, egg, oil and salt. Spoon 1/3 of sauce into 9'x13' baking dish. Cover with 1/3 lasagna. Spread another 1/3 of sauce and cover with another 1/3 of lasagna. Spread cheese mixture and cover with remaining lasagna and sauce. Top with mozzarella cheese slices. Cover with foil and bake at 375F for 45min. Uncover and bake until cheese starts to brown about 15 min.

when in doubt, I make tomato and grilled cheese or fried bologna and cheese :)

OH what a minute, I remember one!!
Take either 4 pork chops or pork tenderloin
put in crockpot
add 1 tbsp soy sauce
1 diet coke
1 can cream of mushroom soup
put in crock pot and cook on low for about 8 hours.
FABULOUS!!

Your not alone with the old stand by lasagna. Throw in a salad, some garlic bread and you have a meal just about everybody loves!

A request I often get are my enchiladas. I usually make 2 trays, one beef, one chicken. Spraying the pan with non stick spray is essential. I also spread a thin layer of refried beans onto each wrap. A precooked rotisserie chicken makes it a cinch. Serve with sour cream, chips, and salsa.

I also boil the carcass down and make chicken vegetable soup. My soup must include, onions, tomatoes, peas, corn, carrots, broccoli, cauliflower, zucchini, squash, mushrooms, fresh green beans, asparagus, and sometimes potatoes. Also, Trader*Joes sells this yummy, Great Harvest Blend mix; It has orzo, garbanzo beans, and red quinoa. I keep it separate and add some to each bowl. (So it does not bloat up). My friends love my soup.

My new thing is homemade BBQ chicken pizza. It's so easy and delicious. Let me know if you want my recipe.

I make lots of "pasta bowls". No one is ever the same, but the basics are whole wheat pasta & whatever veggies are in the house (e.g. saute mushrooms and zucchini or cut up grape tomatos & add yellow squash). I might add some toasted pine nuts or some meat or tempeh. If I have any herbs, I might throw them in too (parsley, oregano, rosemary, or basil.) The "sauce" is always olive oil and grated parm.

great ideas! we do a lot of produce - salads, stirfrys, soups. I really love making butternut squash with stuffing. Easy and so yummy in the winter.
